Yeast No.2, separated during the Meiji era, is among the existing association yeasts the most delicate and least fermentative. It corresponds to what used to be referred to as "women's sake." Its characteristics include graceful sweetness and acidity.

"DEUX" is nearly colorless and transparent, appearing as a pale yellow with a glossy sheen. It exhibits a very fresh flavor profile reminiscent of white grapes and peaches. The sweetness is rich, and bitterness is minimal.

At Obuse Winery,Japanese sake is only produces a small amount of sake in the winter after completing the annual grape wine production. The brewery employs the kimoto brewing method and uses their proprietary rice variety "Miyamanishiki," with a uniform polishing rate of 59%. They incorporate vintage yeast strains 1 to 6 that were released before the war into the brewing process.
