The combination of rice type, polishing method, and house-made yeast has given birth to an elegant and profound sake, unlike any other.

In the "Manjyu house-made yeast brewing," we use 100% "Gohyakumangoku" rice produced in the Echigo-Sanjo area of Niigata prefecture. This low-protein rice creates a refreshing mouthfeel, meets strict standards, and has high-precision refining ability. Adapting to the times, we have created fresh and delicious sake through rice cultivation methods. The Gohyakumangoku rice used in "Manjyu house-made yeast brewing" is prone to breakage during excessive refining, making it difficult to achieve a polishing rate of over 50%. To solve this problem, we chose a method called "original form refining." By maintaining the shape of the rice during refining, we were able to efficiently reduce the protein content. We spent about 100 hours carefully polishing, which is about double the normal time, to achieve a refreshing and pure flavor.

Yeast is one of the key factors that affect the flavor and aroma of sake. To achieve the ideal flavor, Asahi Shuzo cultivates their own yeast. In the "Manjyu house-made yeast brewing," we only use yeast that is naturally generated from thousands of different yeast species, and can better extract aroma.
