The transparency and freshness of the mouthfeel, as well as the crisp aftertaste, are characteristics of high-polish sake. The Yamahai brewing method gives the sake body a deep and layered flavor profile.

Since the sweetness is relatively prominent, I recommend chilling it before drinking to experience its refreshing mouthfeel.

"Swallow" is the first time HITEN series has used high-polish technology to polish rice to 35% for a pure Junmai Daiginjo sake. The brewery uses the Yamahai method and "No.77 yeast" that generates apple acid to ferment the sake, giving it a rich sweetness and highlighting the flavor of apple acid.
