This sake features a rich and mellow mouthfeel, dense flavor, and a well-balanced acidity and aftertaste.

Best served at around 15 degrees Celsius, it can also be gently heated or even served hot. Its flavors pair well with dishes that have a creamy texture, making it suitable for any type of cuisine. It is a deeply satisfying sake that is especially well-suited for pairing with food.

The first time pure rice kimoto was introduced was in around 1983, during the local sake boom that brought ginjo and junmai sake to the market’s attention. But in reality, exploration into pure rice kimoto began as early as the 1930s, more than 20 years before. At that time, the company's president at that time, the 8th generation Ota Shichiroemon, overcame the difficulties of material control during World War II and postwar reconstruction to find a way to rebuild the kimoto brewing method. In the 30s, they challenged the country's almost unprecedented pure rice sake brewing. At that time, there were restrictions on milling rates and a lack of effective cooling equipment, making it an unimaginably difficult time. However, with the later ability to mill white rice more finely and low-temperature fermentation, pure rice kimoto was finally born, the result of long-term accumulation by previous generations.
