Description

This sake is made using a special brewing method called "chuko," which involves storing the sake in a central part of the brewery at a low temperature and allowing it to mature slowly. This method results in a sake with a balanced sweetness and acidity, and a clean and crisp finish. The rice used in this sake is called "Yamahai," which is known for its high quality and unique flavor profile. The rice is polished to a degree of 60%, which results in a full-bodied and rich sake with a complex flavor profile.

The "Daikichisengo Bessen Nakadori Tokubetsu Honjozou" sake is named after a famous musical instrument from the Edo period, the "Daikichisengo Bessen Nakadori." During a visit to a local shop in the area, the owner expressed his love for both the wooden instrument and the local sake, and compared them both as offerings to the gods. This name has since been adopted for this sake.
