Description


The aroma is elegant and refreshing, with a subtle hint of the wooden barrel. The acidity perfectly adheres to the wood, emitting a woody scent reminiscent of forest bathing, while the aftertaste is sharp and refreshing. However, the aroma of the wooden barrel is quite intense, making it somewhat challenging to pair with food. It pairs well with dishes like onsen eggs with sauce, or can be enjoyed alongside raw beef slices.

The label, which is hard to read, is named after the character "ユ" from the name of the brewery owner, Mr. Yusuke Sato, and is a limited edition. This brand has a significant influence on the current direction of "Aramasa." The sake is brewed using "No. 6 yeast" and the Kimoto method for pure rice ginjo sake. Initially, the Yamayu series began with "Akayamayu" using Omachi rice and "Aoyamayuyu" using Miyama Nishiki. The Yamayu series constantly challenges new things every year, changing year after year and garnering attention. While most "Aramasa" sakes are brewed using different koji and urushi rice types, this Yamayu series exclusively uses a single variety of rice for brewing.
