Description


The sake has a crystal-like hue reminiscent of yamabuki (apricot yellow). Its aroma evokes the elegant and exquisite fragrance of apples, pears, and pineapples, making a sophisticated Ginjo aroma. The initial impression is of a gentle and soft sweetness, followed by a rich honey flavor that accentuates the full-bodied taste, concluding with a unique acidity in the aftertaste. The hiire (pasteurization process) is performed to maintain the sake's optimal taste, halting fermentation and ensuring sterilization, which extends its shelf life. As a result, the hiire sake exudes a composed flavor and a richer mouthfeel.

Iwate Prefecture's premium sake rice, "Yuinoka," is polished to 35%, and after fermentation at ultra-low temperatures, the naturally dripping sake drops from the bagged moromi (fermentation mash) are collected into bottles. Only the clear upper part is extracted from the bottle. This method is the most time-consuming and luxurious way of brewing. "Gokujyonokire," meaning "Supreme Sharpness," is a sake with a cutting-edge sharper than any sword. The red-helmeted warrior depicted on the label also reveals its full profile!
