"Ugonotsuki RAY" was born from Aihara Shuzo's strong passion for sake brewing. With the philosophy of "becoming the benchmark for moonlit nights in the new era, the highest-polished pure rice daiginjo in the brand's history," Aihara Shuzo strives to showcase the elegance of daiginjo, pursuing a refined taste and profound aftertaste achievable only through ultra-high rice polishing. The raw material chosen is the "Yamada Nishiki," hailed as the king of sake rice. Specially selected grains that are uniform and suitable for high polishing.

The polishing rate is the highest in western Japan, at "7%." Through meticulous polishing over approximately 350 hours, color sorting after polishing, and milling to remove rice bran, it becomes the highest-quality glossy polished rice. Due to the extremely small size of the grains after ultra-high polishing, retaining only the purest part of the rice, issues such as rapid moisture evaporation and difficulty in increasing enzyme activity arise. To address this, we conducted multiple small-scale experiments, optimized the brewing process, and eventually found the ideal method. Through manual rice washing and handcrafted techniques like limited-time water absorption, the carefully steamed rice maintains its spherical shape without cracking in subsequent processes, slowly fermenting to bring out its refined taste.
