This is a Junmai Daiginjo sake meticulously brewed using only Yamada Nishiki rice. It is made with the unique Kyoto yeast called "Kyoto no Koto" and brewed with natural water from Fushimi, Kyoto. The fermentation process is observed for approximately 4 weeks, and the juice is extracted at the optimal timing. As it undergoes only one heating treatment ("ikkaku hiiri"), you can taste the fresh flavors preserved by this single heating process.
