Description

Among the exhibited Daiginjos, the least astringent and deepest-flavored portion was chosen for aging at low temperatures for three years, creating this exquisite Aged Daiginjo.

To let you savor the utmost of Tedorigawa Sake, we hope you can feel the romance of this sake quietly maturing and aging at low temperatures.

Introducing the limited edition Aged Daiginjo "Kogoshu" from Tedorigawa, the representative sake brewery of the Kingdom of Daiginjo in Ishikawa Prefecture.

Sourced from the clear waters of Mount Shishiku and the premium sake rice grown on the fertile fan-shaped plains formed by Tedorigawa, along with the cold climate, the Tedorigawa River basin has been renowned for its numerous sake breweries since ancient times.

From the late Meiji era to the Taisho era, it once proudly identified itself as the "Sake Brewing Village Yamashima," gaining nationwide recognition by affixing "Tedori Sake" to its sake names, thanks to the abundant rivers. During the peak of the brewing industry, dozens of breweries existed, but now, Yoshida Sake Brewery is the sole inheritor of the mainstream "Tedori Sake."

The seasoned toji (master brewer) Mr. "Yamamoto Teruyuki" uses the full quantity of "Yamada Nishiki" rice from the special A region of Miki, Hyogo Prefecture, polishing it to 40%, and specially brewing it with their in-house cultivated Kanazawa yeast.
