Description

Please enjoy this sake at a temperature of 10°C to 15°C. Compared to being chilled, let it return slightly to room temperature, allowing it to interact with the air and savor slowly. Not only the aroma but also the taste can be felt. The gentle sweetness, lingering aftertaste, and refreshing mouthfeel are impeccable. It's a delight to experience the atmosphere of a top-grade Daiginjo at this price. It excellently breaks traditional notions. This is a limited edition sake with rare and exceptional qualities.

This limited edition sake is made from "Yamada Nishiki," a rice variety cultivated through contracted farming in the Hirai area of Miki City, Hyogo Prefecture. The rice is polished to a ratio of 45%, carefully selecting the top portion from "Arabashiri" to "Nakagumi" for this Junmai Daiginjo.

"Arabashiri" refers to the fresh sake that flows out from the top layer of the moromi (fermenting mash) stacked in the fermentation tank (funé) before the pressing process, determined by its own weight.
