"Sobeiwase" is a local variety in the Shonai region, known as the "phantom sake rice," and is the original strain of the "Kame no O" variety, which is even rarer now. Through years of cultivation and the help of Yamagata Prefectural Agricultural Research Center's paddy agricultural experimentation field, the cultivation area gradually expanded, and this rice has successfully revived in modern times.

Shonai has been a breeding ground for farmer-driven rice variety improvements since ancient times, and we hope to preserve and pass on this history and agricultural product in the form of Japanese sake. The brewery family's crest, "Genji car," and the trademark incorporating "Shield" express the will to protect and continue the inheritance of what we already have.
