This Hiyaoroshi (autumn sake matured over the summer and bottled in autumn) that has undergone low-temperature aging throughout the summer, becomes fuller in flavor, complementing the taste of autumn. It utilizes the unique gentle and beautiful expansion of Yuki Megami (Snow Goddess) while providing a rich umami taste, making it a sake suitable for food pairings.

This year's Hiyaoroshi uses "100% Yuki Megami." Yuki Megami is the first variety cultivated in Yamagata Prefecture specifically for making Daiginjo and Junmai Daiginjo. This is a mid-season variety with short stalks and strong lodging resistance, with larger yields than Dewa Sansan, about 1 gram heavier per thousand grains, and a higher percentage of shinpaku (white heart). Shinpaku is small, making it suitable for high-polish rice, and has a lower protein content, making it excellent for Daiginjo and Junmai Daiginjo. Its sake quality is equally excellent as "Yamada Nishiki," and has a clean and beautiful taste.
