This sake showcases the characteristics of "Miyama Nishiki," produced in Nagano Prefecture, with a refreshing and crisp taste, akin to the refreshing and rich aftertaste of lychee, along with a unique finish.

Chapter 6 of "59 Takachiyo" is a local sake from Minamiuonuma, Japan, where traditional craftsmanship and the association yeast 1801, suitable for the region, coexist with the renowned water named "Kanamaki no Mizu." It is a highly popular ultra-limited edition sake, based on rice from across the country, uniformly polished to 59%, presenting its authentic raw sake series.

Miyama Nishiki is a relatively new sake rice variety developed in 1978 through radiation treatment at the Nagano Agricultural Experiment Station. Sakes made with this rice have a fresh and crisp taste.

In terms of raw rice, the sake rice "Miyama Nishiki" is selected and carefully polished to 59% using the flat polishing method. The production takes place in the extremely soft water of Mount Kanamaki in Echigo Shuzan, resulting in an unadjusted pure rice ginjo raw sake.

While the meticulous flat polishing process takes twice as long as conventional polishing, it allows for the removal of unnecessary portions around the shinpaku (starchy core), compared to traditional methods. This results in a sake with a refreshing and clean taste, with a polishing rate of 59%, actually equivalent to a polishing rate in the lower half of 50% in terms of brewing quality.

This is a popular series, and all the sakes are brewed in the junmai ginjo style, allowing enthusiasts to fully experience the characteristics of each rice variety while preserving the unchanged pristine water and nature of Minamiuonuma.
