This sake has a gentle aroma and a subtle sweetness reminiscent of persimmons, with a slight bitterness that is exceptionally balanced. It makes for an ideal accompaniment to a wide range of foods.

This sake is made using a rare rice variety called "Kamenoo." This variety was first discovered in Yamagata in 1893, and is the ancestor of many rice varieties including the famous "Koshihikari," but its cultivation was largely discontinued until its recent revival in Niigata. Kamenoo has a rich flavor profile and broad range of flavors, and each brewery's brewing style can be reflected in it.
