The meticulous flat polishing technique, although requiring twice as much time as conventional methods, reduces excess around the shinpaku (starch center), preserving more of the shinpaku to enhance the purity of the sake.

The unique flavor of this sake is nurtured by the pristine water and nature of Minami Uonuma. The brewery consistently employs the Daiginjo brewing technique, allowing the characteristics of each rice variety to be fully expressed, resulting in a highly popular series of products.

Exploring the essence of Japanese sake rice using flat polishing techniques is a characteristic of the Junmai Ginjo raw sake series.

Hailing from the renowned rice-producing region of Minami Uonuma, the Takachiyo brewery is known for its traditional craftsmanship and the natural purity of water from the Kanamaki Mountains. This ultra-limited "59 Takachiyo" raw sake is a limited distribution product of the brewery, utilizing rice from various regions across the country. Under the influence of Association Yeast 1801, the rice is polished uniformly to a flat polishing rate of 59%, marking the fourth chapter of the highly acclaimed raw sake series, known as the Hanafubuki unadjusted raw sake.

Hanafubuki is an original variety from Aomori Prefecture, characterized by a rounded and rich mouthfeel, with a flavor profile between Yamada Nishiki and Gohyakumangoku.

The rice used is "Hanafubuki" from Aomori Prefecture, polished with the flat polishing technique to 59%, and brewed using the extremely soft water from the Kanjikiyama in Echigo Hiyama, resulting in a pure rice Junmai Ginjo unadjusted raw sake.
