Description

The sake has a refreshing and smooth mouthfeel, with aromas reminiscent of grapes, peaches, and sweet melon; it carries the distinct first-pressed sensation unique to "Sugata," filled with fruity flavors.

Located in Tochigi City, Tochigi Prefecture, the brewery "Iinuma Meijo Co., Ltd." produces the Japanese sake brands "Sugata" and "Suginamiki." Established in the 8th year of the Bunsei era (1811), the brewery boasts a history of over 200 years.

Initially, the brewery was overseen by Echigo Toji, but after his retirement, the chairman took over as the production manager. With the help of three local sake brewers, they produced around 500 koku of sake. They pay meticulous attention to raw material processing (rice washing, soaking) and koji making, employing limited water usage and full-box koji methods.

Our first encounter with "Sugata" was at a tasting event organized by the Tochigi Prefecture Sake Brewers Association. While the sake from other breweries was also delightful, "Sugata" stood out, prompting us to establish a supply relationship. This "Sugata Junmai Ginjo Muroka Nama Genshu Hatsusugata" uses the first pressing of Gohyakumangoku rice, suitable for brewing.
