This sake is packed with rich flavors and elegant sweetness, ending with a refreshing taste, like sweet nectar. Please savor this "sweet flavor" that has been brewed with more than twice the time and effort than usual.

This is a pure rice Daiginjo sake brewed using the unique "Hachidan Shikomi" process, which is an exclusive brewing method of our company.

In the production process of sake, typically during the brewing of the "moromi" (sake mash), the moromi is added to the tank first, and then the koji (malted rice), steamed rice, and water are separately added in three stages. This process is called "sandan shikomi" (three-stage brewing). The unique aspect of our brewing method is that we use a more complex "hachidan shikomi" (eight-stage brewing) process, for which we conduct the process five times.

This brewing method helps maintain the yeast's activity and achieves a flavor of "rich sweetness".
