In its freshly brewed stage, the rice umami remains hidden deep within the body of the sake, resulting in a taste that is not overly rich or heavy. Instead, it is exceptionally well-suited for warm-weather enjoyment, offering a refreshing clarity and smoothness down the throat — perfectly balanced.

The sake truly enters its “golden tasting period” after aging through the summer. As it matures, the texture becomes softer and rounder, allowing the previously subtle, pure rice umami to gradually emerge. This matured style of drinking is also highly recommended.

This sake comes from Takagaki Shuzo in Wakayama and is part of the “Satonohana” series, which expresses the flavor of sake rooted in nature and the local countryside. The elegant name symbolizes the beauty of rural Japan and the floral essence of rice. This particular bottle is labeled “Nakadori,” indicating that it is a carefully selected mid-press cut of premium quality.

This sake continues Takagaki Shuzo’s hallmark style — a gentle mouthfeel that masks its high alcohol content, a direct and pure expression of rice umami, and a refreshing, clean finish. Brewmaster Toji Ninsei’s signature lies in the sake’s crispness and freshness, which differs from the richer style previously pursued by the late Tōji Junichi. Ninsei’s brews are characterized by a slightly higher acidity, presenting a completely new expression of sake.
