Due to the retention of some carbon dioxide during bottling, this wine exhibits subtle bubbles, making it a refreshing and invigorating white wine. With the aroma of fresh fruits, a rich palate, distinct acidity, and delicate sweetness, it presents a well-balanced profile, offering a dry and crisp white wine experience.

It pairs exceptionally well with various Japanese dishes, especially seafood, including sushi and sashimi. It also complements oysters, Carpaccio, and grilled chicken (salt-grilled).

"Sur Lie" is a French term that means "on lees," referring to a winemaking method. Several techniques are employed, including superoxidation of the juice and air exposure, as well as the choice of yeast. The wines are then blended before bottling. Aged for approximately six months "on lees," the wine undergoes periodic stirring to enhance the flavors from the lees. After racking, the wine is filtered without undergoing treatments such as bentonite fining and tartrate removal, then bottled.
