At a low temperature, you can feel the fragrant and silky texture reminiscent of honeydew, with light and refreshing flavors and a solid aftertaste, making it a dry sake. It is recommended to pair with strongly flavored seafood such as crab or yellowtail.

As the temperature rises, the initially light flavor gradually spreads, and at around 40 degrees Celsius, the depth of the flavor reaches its peak. It maintains its refreshing taste while the richness of the umami flavor and the aroma brought on by the temperature rise leave a lasting impression. It is perfect to pair with rich seafood such as crab roe and shirako, as well as rich and warm dishes like cheese or baked dishes.

At temperatures above 50 degrees Celsius, it returns to a clear sake and becomes a dry kanzake. This sake is very suitable for hot pot or oden and follows the concept of enjoying its quality within a wide temperature range. Be sure to choose the appropriate temperature range to enjoy it according to the food of the day.

The Noguchi Naohiko Research Institute, led by master brewer Noriyasu Noguchi, has released a winter limited edition product, featuring a sake that can be enjoyed at a wide range of temperatures. Despite being heated, it is bottled in its original undiluted state.
