Description
Soft, mellow aromas create an elegant and gentle impression. On the palate, it is smooth and refined, lifted by Nichinichi’s trademark fine bubbles. A delicate sweetness forms the core, harmonizing with comforting umami and the unique bitterness-and-acidity rhythm of Kairyoshinko rice. Rounded yet accented with subtle highlights, the sake finishes crisp and refreshing, making it approachable and easy to enjoy.

This rare limited bottling, Nichinichi Kairyoshinko, is also from Nichinichi Jozo in Kyoto. Brewed with Akita-grown Kairyoshinko rice provided by Aramasa Shuzo—the brewer behind the iconic “No.6” and a close partner of Nichinichi—it embodies the unique character of this historic variety. Descended from the Takanenishiki line and considered a sibling to Miyamanishiki, Kairyoshinko is one of Aramasa’s key rice varieties. Here, combined with Nichinichi’s distinctive brewing style, it becomes a finely crafted, characterful sake. Not produced every year, it is a rare release worth seeking out.
