Description


This sake uses the classic 'Yamada Nishiki' rice, making it a luxurious Junmai Ginjo sake. Through low-temperature, long-term fermentation, the hidden aroma of Yamada Nishiki and its clear and bright acidity spread in the mouth. Despite undergoing one pasteurization process, it retains a moist feeling and a light and lively mouthfeel. The Ginjo aroma carries a hint of fruity fragrance, and the clear sake texture gently combines with the subsequent acidity and slight astringency, creating a beautifully balanced taste.

This sake has been awarded the SILVER prize in the Junmai Ginjo division of the SAKE COMPETITION 2018. The brewery was established in 1660 and has been brewing sake in Nara Miwa, the location of one of Japan's oldest shrines, the Oomiwa Shrine. Since ancient times, Imanishi Shuzo has been committed to brewing fine sake around the Oomiwa Shrine, known as the 'God of Sake' and the 'Ancestral God of Brewing.' The brewing water used comes from the Tonzai well, sourced from the underground water of Miwa Mountain. The rice used is also grown by contracted farmers along the same water vein. Imanishi Shuzo takes pride and joy in being able to brew sake in this world-unique sacred sake land and will continue to produce representative Japanese sake that embodies the spirit of Miwa.
