As the hot summer comes to an end, the truly exceptional Banshu Yamada Nishiki ushers in a perfect harvest.

Each year, the brewery adjusts its brewing process according to the natural environment, ensuring that the flavor of the "king of sake rice" is vividly expressed.

In the Shonai Plain of Yamagata Prefecture, this fertile granary area nurtures the sake brewery "Kudokijozu," which specializes in ginjo sake with care taken in the use of Yeast No. 10. This seasonal limited edition new sake is brewed using Banshu Yamada Nishiki from Hyogo, marking the beginning of this year's sake brewing.

The new brewery "Miraikura" is entering its sixth brewing season, and Kudokijozu consistently adheres to tradition, officially starting the new year's rice washing process on Daian Day every year. At the start of brewing, the team repeatedly checks the state of the steamed rice, adjusting the steamer and stove to achieve the best steaming results. This year, they successfully steamed the ideal sake rice, laying a solid foundation for the new brewing season.
