By using a diamond mill with minimal frictional heat and polishing only the core part of the rice, the "shinpaku" to 11%, this Junmai Daiginjo sake exhibits a soft and refined sweetness. The lingering aftertaste on the palate is gentle and delightful, almost delicately falling on the tongue.

This ultra-limited edition product, "Junmai Daiginjo 'Prohibited Technique 11%'" in a purple box, is launched by the artisan brewery "Kudokijozu" from the Sannohe storehouse region of Yamagata Prefecture, known for its No. 10 yeast.

"In 2022, 'Prohibited Technique 11%', brewed using Yamagata sake rice 'Dewanokura' for this year's Junmai Daiginjo."

Each profession has its own taboos, representing actions considered "not to be done." In the sake industry, there are also some related "taboos" associated with production, becoming legends within the industry: 1. Steam treatment during rice steaming, 2. Use of stirring rods in fermenting mash, 3. Polishing rice to 35% or less. The challenge of polishing to 11% is seen as embracing both tradition and innovation in the sake industry, marking a new attempt for Kamenoo Brewery.
