“Reviewing the past to inform the future, incorporating the modern evolution of the sixth generation brewing Ogawa yeast.” This limited edition is produced by “Kudokijozu,” a ginjo brewery in the Shonai Plain of Yamagata Prefecture, with all brewing processes personally overseen by brewery president Toshinori Imai. Using 40% polished pure rice ginjo with Ogawa yeast, this sake embodies a new acidity and aroma not previously seen in “Kudokijozu.” The brewing concept aims to create a sake that is desirable and worth sharing. The rice used is Yamada Nishiki from Banshu in Hyogo Prefecture, polished to 40%, and is part of the junmai daiginjo nama product brewed with spring water from the sacred Yatsugadake mountains and Ogawa No. 10 yeast.
