This sake has a mature and fresh fruit aroma, such as apples, lychees, and pears, combined with a refreshing atmosphere. Perhaps the balance of this aroma is due to the benefits of "Manakatori" (natural dripping method).

It has a slight carbonation unique to Kaze no Mori, and the refreshing sweetness bursts in the mouth. The slightly viscous texture, like a pear, grape, or freshly picked apple, presents the flavor of the fruit in a three-dimensional manner.

The fruit juice sensation of this sake is excellent, and you can also taste elements such as sourness and bitterness, enjoying a refreshing taste. Overall, it achieves a very delicious flavor.

Located in Gose City, Nara Prefecture, Aburacho Sake Brewery continues to produce a range of limited edition products with both traditional and innovative elements.

This sake is made from Aiyama sake rice from Hyogo Prefecture's special A-grade area, polished with Kaze no Mori's signature 80% degree. It adopts the "Manakatori" method, which only collects the naturally dripping part of the sake mash without applying pressure, and strictly selects the well-balanced parts before bottling it, making it a very luxurious limited edition product.

The meaning of "807"

In the Kaze no Mori series, particular designations of sake type (such as "junmai" or "junmai ginjo") have been dropped, and all sake is marked as "Junmai Nara sake," using uniform terms for polishing ratio and yeast. The "80" represents 80% polishing ratio, and the "7" represents yeast No. 7.
