Through the complex interaction of various microorganisms, sake brewing is committed to achieving a multi-layered aroma and taste. Compared to traditional Kaze no Mori sake, this sake highlights a more pronounced acidity, with a rich aroma reminiscent of pear and a refreshing aftertaste.

Kaze no Mori is a sake produced in the Nara Imperial Palace in Japan. The brand was born in 1998 and celebrates its 25th anniversary in 2023. To commemorate this milestone, Kaze no Mori is launching a new commemorative sake, of which this is the first.

The concept of the 25th-anniversary sake is to brew and release a sake that embodies the future of Kaze no Mori 25 years from now, based on several themes. The first theme is "Five Microorganisms".

Here, microorganisms refer to the bacteria that exist in nature. The five microorganisms are: yeast number 7, koji mold, Nara Shoryakuji lactic acid bacteria discovered in the bodai moto used in the ALPHA series, the popular white koji that produces a unique sour taste, and the less familiar Pichia yeast. Pichia yeast is a kind of yeast that is different from the sake yeast (Saccharomyces yeast). Its existence has also been found in the mash of "Minato," a sake brewed in jars. Therefore, it is believed that this microorganism may be closely related to sake brewing in ancient times such as the Middle Ages. The use of Pichia yeast in modern sake brewing is Japan's first attempt.
