The sake rice "Tatsunootosigo" developed by Juyondai is meticulously polished to 50% of its original size and carefully brewed, resulting in a refreshing pure rice ginjo sake. The addition of fresh acidity imparts a subtle flavor, while the slightly dry finish leaves a distinct impression.

"Tatsunootosigo" is a combination of the paternal "Yamada Nishiki" and "Kinmon Nishiki," forming the "Yamazake No. 4," while the maternal lineage is the improved "Kanena Nishiki" known as "Miyama Nishiki." This particular sake rice is cultivated exclusively for brewing, making it the finest choice for crafting sake. The rice undergoes a polishing rate of 50%, effectively removing 50% of the outer layer. However, it is precisely this removed portion that imparts the rich aroma, allowing the relatively rare intense flavor of the Juyondai series to come to the forefront.
