The aroma is light and delicate, bringing a pleasurable and intoxicating sensation. Upon tasting, a subtle sweetness of pear unfolds, followed by the rich flavor of sake rice that emerges softly. The finish carries a slight bitterness, yet possesses depth that enriches the overall palate. Such sweet and delightful aroma lingers in the mouth, creating an incredibly wonderful experience.

The "nakatori Junmai Ginjo" series includes multiple varieties, one of which is "Aiyama." In addition to "Aiyama," there are other varieties like "Yamada Nishiki" and "Omachi." Among these varieties, including "Aiyama," each sake label is adorned with different foil colors, such as copper (Aiyama), green (Yamada Nishiki), and purple (Omachi).

In the process of sake extraction, it is divided into three stages: "Arawari" (first press), "Nakadori" (middle press), and "Oshikiri" (last press). Firstly, bags containing moromi are gradually stacked and compressed from the top to extract the moromi. The initial liquid that comes out of the bags is called "Arawari," which has a lower alcohol content and presents a clear appearance. In the "Tsuki" stage (referring to the stage where the liquid flows out of the bags), the liquid is called "Nakadori," and the final extraction is referred to as "Oshikiri." In essence, "Nakadori" refers to the refined liquid obtained by removing the initial and final parts during the moromi extraction process.
