Upon opening, the aroma is gentle, with subtle hints of caramel and smokiness. The palate is soft and rounded, and despite its lightness, one can still perceive the unique sweetness, richness, and robustness of the Omachi rice, offering a rounded and flavorful quality.

Aged sake often possesses excellent overall balance, with a smooth and non-irritating flavor profile. This pleasant sensation, in a sense, is healing, and it is already delicious when enjoyed at room temperature, but heating it up further enhances its richness.

"Akagane," a product of Iwakikotobuki, focuses on aging and overwhelming presence, aiming to create a sake with diverse yet gentle and mellow characteristics, providing a drink that won't fatigue the palate. It is a Junmai sake with aging time, water addition, and fire treatment.

The yeast selected is the classic and most suitable for aging A-6 strain yeast, extracted from the Yamahai sake yeast at Yamagata Seizoh.

This noble and warm metal copper color (Akagane), passed down since ancient times, is integrated with this product and applied to the label.
