Description

The initial notes offer a splendid and stable melon-like aroma, characterized by a sense of elegance. Using self-preserved yeast, the brewing process embodies the essence of the "Isojiman" realm. Upon tasting, there is a delightful sweetness with some subtle acidity that isn't overpowering. The aftertaste leaves behind an elegant atmosphere that lingers, making one feel as if time has been forgotten.

In the story of Japanese Sake Terroir, in the classification system of French wines, the origin of the top-grade rice corresponds to the Special A region. In this Special A region, the rice paddies are also designated and named accordingly, such as the Yamada Nishiki rice produced in Akitsu. This sake is limited to release in November.
