This "Imanishiki Junmai Daiginjo Genshu" is brewed entirely from "Miyamanishiki" rice produced in Nagano Prefecture, with a polishing ratio of 39%. It combines high-quality spring water from the Southern Alps and yeast sourced from Nagano Prefecture, carefully fermented to perfection.

After long-term fermentation at low temperatures, the sake is meticulously extracted using the now somewhat rare traditional technique known as "Fune-Pressing." This technique involves neatly arranging the sake bags in a pressing box and slowly applying pressure, resulting in a sake that is free from any off-flavors.
