The initial aroma of this sake features a lactic acid-like scent that evokes the flavor of rice. It also carries notes of banana, candy, summer oranges, and mint. Upon tasting, the subtle bubbles create a stimulating sensation. The flavor profile is akin to a refreshing yogurt drink with hints of marshmallow, peach, and coconut, creating a condensed yet delicate sweetness akin to rice flowers, with a subtle hint of lemon flavor. The rice flavor becomes increasingly pronounced in the latter part of the palate, with rich sweetness and a lovely, gentle bitterness accompanied by a touch of acidity. The overall taste is harmoniously unified, with the flavor of white koji being surprisingly subdued.

Typically, Japanese sake is made using "yellow koji," but this particular variety uses "white koji," which is commonly used in shochu production. The use of "white koji" results in the production of citric acid.
