This is a freshly pressed special junmai sake from Ibimi, with the characteristic aroma and sweetness of Ibimi. It has a rich fragrance and sweet taste that is intoxicating. The texture is smooth, and the sweetness is the prominent feature throughout. It maintains an excellent harmony between its sweetness and acidity.

"Ibimi" was named after the town of Ibimi, where Sugihara Shuzo is located, and also means "shooting good sake". The rice used in this sake is called "Ibi no Homare", which is a hybrid of Yamada Nishiki and Wakamizu rice created through a collaboration between Sugihara Shuzo and local farmers. The name comes from the Gifu prefecture where Ibimi is located, and "Ibi no Homare" is a unique rice variety exclusively used by Sugihara Shuzo.
