This sake is brewed at the end of the year and pressed during the cold season. You can taste the freshness of the newly pressed sake, but if stored in the refrigerator, the flavor gradually deepens, allowing you to experience another kind of enjoyment different from when it's freshly pressed. Aging it at home and discovering the timing that suits your taste is also an interesting experiment.

"Houraisen Haru no Kotobure" is the sister sake of Houraisen's Junmai Daiginjo "Sora." Since the raw materials, rice polishing ratio, and fermentation specifications are the same, it is popularly known as the "brother sake of Sora." Unlike "Sora," it uses a different fermentation yeast and is not subjected to water addition or heat treatment in the production of raw sake. As it is raw sake, even those sensitive to alcohol can enjoy its deliciousness by adding a little water with ice. Every year around the beginning of spring, our brewery releases this "Spring Sake" to welcome the arrival of spring.
