This Japanese sake has a noticeable creamy texture, despite the addition of a large amount of yeast during the brewing process. The initial impression is that the sake is filled with yeast, but in reality, it doesn't have an overly viscous feel. Instead, it is more like a dry and lively type. Although there may be a lot of sediments floating at the bottom initially, these are not ordinary sediments but actually a product of the sake called "Hirotogawa."

First, taste the clear top portion (there may be a strong gaseous sensation upon opening, but it will settle after waiting for five minutes). It has a refreshing taste with a subtle pear-like aroma and lactic acid flavor.

Next, gently stir the sediments. This completely changes the impression. The mouthfeel immediately transitions from refreshing to a gentle sweetness and juicy deliciousness. It has a delightful acidity (truly delicious) with a moderate refreshing aftertaste.

Despite being a Junmai, it has a sweet umami flavor while also offering the enjoyment of spiciness and sweetness. This sake is truly unique.

Matsuzaki Shuzo, since its establishment in the 25th year of the Meiji era, has maintained traditional brewing techniques. The name of the sake, "Hirotogawa," comes from the local Shakyado River, which was once called "Hirotogawa." The brewery is surrounded by vast fields, creating the ideal environment with abundant "water" and "rice."

Matsuzaki Shuzo in Tenei Village has introduced a new product called "Hirotogawa Junmai Nigori."

Yumenoka: In 2000, Fukushima Prefecture developed a type of sake rice to withstand cold weather and lodging, replacing the Gohyakumangoku variety. Yumenoka is a carefully selected crossbreed between Yamadanishiki as the mother rice and Dewasansan as the father rice, known for its rich heart white and excellent brewing characteristics.

※This product is an "active nigori sake." As it is a sake in which the yeast is still alive, it is very sensitive to temperature changes. Before opening, you can tear the small circular mesh in the center of the bottle cap with a needle, allowing the gas inside to be released, making it easier to open the bottle cap.
