This sake, crafted using Yamada Nishiki for koji fermentation and local edible rice "Nikomaru" for the additional rice, exudes a fresh and lively profile, reminiscent of sweet melon and pineapple. The palate is both juicy and refreshing, making it dangerously easy to drink, sip after sip.

"Hiran Nikomaru Queen" Queen is a sake born in the pursuit of exploring the possibilities of edible rice. The origin of Queen traces back to the "Hiran-kai" (a gathering challenging the art of sake) initiated by the brewers. In 2019, the Hiran-kai focused on the theme of "polishing rate." The project aimed to unify raw materials such as rice, yeast, and koji, varying the polishing rates to 90%, 60%, and 30%, to observe the impact on the sake's quality. The unexpectedly popular sake born from the 30% polishing rate of Nikomaru led to the regular production of the current Queen, based on a 25% polishing rate. Why the name Queen? The sake from Nikomaru 30% leaned towards a sweet, fruity profile, more fitting the image of a sake preferred by women, hence the name Queen. Queen has been officially in regular production since last year, with the hope of allowing more people to experience the charm of edible rice "Nikomaru" in a different form on February 5th, "Nikomaru Day." Note: Due to cellar renovation, the current season cannot provide the Queen in its raw sake version. However, the next season will offer the raw sake version of Queen, making the current speed-fermented version the final year.
