This sake has a mild aroma with a subtle lactic acid flavor. The mouthfeel is refreshing and smooth, with a feeling of abundance of flavors. When you take a sip, you feel the smooth sweetness and richness of the sake, accompanied by a crisp acidity reminiscent of apple, pear, and Western pear. Although there is a sense of fullness from the sake lees, the overall taste is still light and refreshing, showing off its natural sweetness and acidity.

Yamahai brewing method is famous for its unique acidity. By using the "Shitsuke" method, this sake retains its rough acidity while increasing the sweetness, achieving a good balance.

Shitsuke is an old brewing technique that includes multiple types such as steamed rice Shitsuke, glutinous rice Shitsuke, yeast Shitsuke, and sweet sake Shitsuke. The brewery uses the "Steamed Rice Shitsuke" method, which involves adding steamed rice (same as brewing rice) directly to the mash while it is still hot.

The brewing process uses Keyaki cypress barrels and Yaegaki-style pressing to produce a slightly sake-like Japanese sake.
