Description


The aroma is relatively mild, subtly reminiscent of fresh yogurt with lactic acid notes. The taste is fresh and juicy, with a gentle and sweet sensation, accompanied by the juiciness of grapes and pears. The refreshing lactic acidity complements the fruity aroma of the wine.

Despite the fullness of sediment, one can still enjoy a refreshing and delicate sweet-sour taste. The smooth texture and natural feel make it a very easy-to-drink sake.

In the brewing process, the "steam rice four-stage preparation" method is used, where newly steamed rice is added before pressing the "moromi" to enhance sweetness and richness. Typically, the use of Yama waste in brewing can result in a hard characteristic in the final product. However, through the "steam rice four-stage preparation" method, the sharp acidity is masked during the new sake stage by sweetness, resulting in a well-balanced, moderately sweet fruit aroma Yama waste.

Brewed using Yoshino cedar barrels and following the Yae-gaki style pressing method. It retains the characteristics of a slightly cloudy sake ("Usu-nigori" type).
