Following "Tae" the unique blended style of aged sake is an unprecedented masterpiece. "Gikyo," founded in the mid-Edo period, captivates many ardent fans with the characteristics of its raw ingredients and overwhelming presence. This "Kei" is a junmai daiginjo limited to this brewery, representing its top-notch aged sake blend style. The highest-grade sake rice — Yamada Nishiki from the Tokujō region in Higashitōjo, Hyogo Prefecture — is polished to 40%. The junmai daiginjo original sake from the middle section is aged in refrigerated conditions for more than 3 years but less than 15 years. By blending aged sakes of different years, this unique Japanese sake is created.

This style of Gikyo is regarded as the essence of this brewery. By using the highest quality sake rice and excellent brewing techniques, along with complete refrigeration facilities and a substantial reserve of aged sakes of over twenty years, such outstanding sake can be produced.
