One of the characteristics of the sake brewed with Ginnosato rice is its rich flavor. Compared to fragrant sake rice varieties like Yamada Nishiki, it has a relatively mild aroma but is known for its robust and popular taste. Among sakes made with Ginnosato, it falls into the easy-to-drink category, offering an excellently balanced profile, making it a sake confidently recommended for those trying Ginnosato for the first time.

EikoFuji's Ginnosato will be rebranded with a new name "Akaiwa Ginnosato," named after the passionate image of "magma." Infusing the fervent and intense emotions reminiscent of magma into every bottle, we are sure to delight enthusiasts. EikoFuji has been using Ginnosato since 2015. Before Yamada Nishiki became mainstream, Ginnosato had its moment of fame in tasting events and competitions. It's the only sake rice that has been cultivated for over 100 years.

Being a soft rice variety, Ginnosato is challenging to polish to high degrees. In the local breweries, many use Ginnosato, including Tohoku Izumi, Fumotoi, Hatsu Musume, Dewazakura, and more.

This sake was previously adopted by the Kimikawaya original sake delivery club.
