This is a richly flavored Junmai Ginjo sake, matured slowly over the course of a year. Both the cultivation of the rice and the brewing of the sake pose numerous challenges, but the resulting sake is filled with a unique and mild flavor.

"Omachi" is a sake rice discovered in 1859 in Omachi (now part of Okayama City, Okayama Prefecture). It features large grains and abundant shimpaku (pure white starch at the center of the rice), earning it a reputation as one of the finest brewing rice varieties of its time.

Due to its naturally excellent brewing characteristics, it has been widely used in breeding new varieties throughout Japan, with its lineage passing down to many existing sake rice varieties, such as "Yamada Nishiki" and "Dewasansan."

This sake has received several awards in the IWC SAKE Junmai Ginjo and Junmai Daiginjo categories, including the Trophy in 2011, Gold in 2011, Silver in 2015, as well as Bronze in 2009 and Silver in 2016.
