The sake rice used to make this Junmai Daiginjo sake is known as "Yamada Nishiki," which is considered the pinnacle of the brewing industry. The rice has been polished to 23%, and the luxurious "sake mash" is used for brewing. Similarly, this sake is also produced using an expensive centrifugal separation machine, which separates the "mash" from the "sake" to create the ultimate pure Junmai Daiginjo sake. When poured into a glass, it exudes a gorgeous aroma, with a crisp and refreshing taste, with a hint of sweetness.

[Centrifugal Separation]

Typically, there are two methods for extracting sake: one is to put the "mash" (the main ingredient of sake) into a sake bag and let the liquid flow out using the weight of the "mash"; the other is to apply pressure from the outside using a machine. However, this centrifugal separation, which Asahi Brewery has introduced in Japan for the first time, is a breakthrough method that separates the "mash" into sake and sake lees using a centrifugal force of 3,000 rotations per minute. This method does not apply any pressure, allowing for a natural drip like drip sake to produce the highest quality sake.
