This sake, after pressing, allows the lees to settle in the tank, and then the clear liquid is carefully bottled, maintaining the state of raw sake for direct shipment. Upon arrival, it is fresh with a slight sensation of pressed gases, offering a pleasant and refreshing taste. Over the aging process of six months, one year, and two years, its flavor gradually becomes rich, mellow, and smooth, with a touch of sweetness. The clear and transparent taste, along with a moderate fullness and fresh acidity, makes it an ideal choice for pairing with food.

There are various ways to enjoy it according to personal preference. Starting with the freshness and refined sweetness of the sake is recommended, and some people enjoy it slightly warmed as hot sake.

This is a meticulously crafted small-batch Junmai Ginjo sake, made from sake rice in Tsushima City, Aichi Prefecture, and brewed with subsoil water from the Kiso River. Part of the popular "Newspaper Series" at Chouchin Sake Brewery, it uses Yamada Nishiki rice from Hyogo Prefecture, polished to 50%, and is an unfiltered raw Junmai Ginjo sake.
