Description

The appearance is a pale yellow color. The initial aroma has hints of rosemary and hazelnut. There is a sense of aged fragrance. The taste is gentle. The sweetness is well-controlled, and the acidity gradually spreads. The aroma is mild, with notes of cooked rice, white rice flour, and yuzu citrus. It is refreshingly crisp, almost like air, and the finish retains the deliciousness and aroma of white rice flour.

It pairs well with bonito, accentuating the acidity of the sake. When paired with naturally red snapper marinated in kelp, it complements each other perfectly, with the lingering taste of the dish and the sake being distinct. The aroma of rice rises in the mouth, leaving a faint impression of milk.

Chooroku Brewery's "Namazume Hiyaoroshi"

It is not just aged for one summer, but for a whole three years.
