This Junmai Daiginjo sake possesses the unique elegant top aroma of Kumamoto yeast, along with the original sake's distinctive expansiveness, coupled with the refreshing acidity of Bijofu, ultimately creating a sake suitable for pairing with fine cuisine.

Selected the highest grade rice suitable for brewing, Yamada Nishiki rice from Hyogo Prefecture, bottled directly in its raw state after fermentation, and aged under low-temperature conditions. Bottle heat treatment is carried out at the optimal time, followed by further aging in a cold environment until autumn.

This is a labor of love crafted by the brewers with full dedication during the once-a-year brewing process. With the highest level of brewing craftsmanship, it is hoped that you will enjoy it in its best condition.
