This sake showcases the unique apple flavor of the Aramasa No. 6 yeast, with a refreshing acidity and complex finish. Compared to No. 6, the fruitiness is more subdued, but the characteristics of the kimoto method can still be appreciated. Overall, the quality of the sake is outstanding and very enjoyable.

Named after the first-generation Sato Ubei, "Yamau Sato Ubei" is a rare sake available exclusively in Akita Prefecture. Among them, the black label "Yamau" is a product crafted by Aramasa Sake Brewery to celebrate its 165th anniversary since its founding in 1852. Historically referred to as "Ubei's sake," it is regarded as one of the highest quality sake offerings in Aramasa's history. Aramasa Sake Brewery, located in Akita City, has a name succession system in place. The sake mother uses the traditional "kimoto" brewing method, and the yeast is cultivated from the "No. 6 yeast" discovered at the brewery, reflecting the brewery's dedication and uniqueness. Additionally, all sake rice used is sourced from Akita Prefecture, with no additives added, pursuing the true nature of Japanese sake. Regardless of the polishing rate, all products are sold as junmai sake. "Yamau Sato Ubei" is characterized by a balance of acidity and sweetness, offering a bright flavor.
