Description

This sake is almost like brown rice, taking you back to the flavors of the Edo period. It has a slight sweetness upon entry, but before you have a chance to savor it, a lingering bitterness emerges. At the same time, it emits a faint fruity aroma.

This pure rice sake is brewed with low rice milling rate, faithfully recreating the essence of Edo period sake. Generally, brewing sake using rice that has hardly been polished is very challenging, as it often produces many unwanted flavors. Since 2019, Shinsei Shuzo has been continuously experimenting and striving for perfection with the harvested rice, resulting in significant developments and endless potential. This is a remarkable creation worth paying attention to. The terms "88, 90" refer to the rice milling rate.
