This results in a sweet and rich taste in the finished product. Hinotori Betsuatsurae Jikagumi is uniquely brewed in wooden barrels, which adds to its distinct character. The "Jikagumi" method refers to directly bottling the freshly pressed sake on-site, dedicating significant time and effort to minimize its exposure to air.
